Fry up some ground beef, seasoning, 1 onions, 1 green pepper, 1 jalapeno, and minced garlic till beef is done…..drain if necessary. Add in 1-2 T. cumin, 2 c. frozen corn, 1 can drained black beans.
In greased 13×9 dish, layer enough corn tortillas (break them if necessary), then add in a layer of enchilada sauce to cover, next ground beef mixture, and finally cheddar. Repeat layers ending with cheese.
Bake, covered at 350 for about 25 minutes. Then, poke a fork in it to stir the juices and then bake uncovered for about 30 minutes.
Serve with rice.
