If you head over to my pinterest page (thebarefoothomeschooler AC), you can scroll through my different boards and eventually, you will land on a set of boards labeled “Weekly Menu 1-8”.  I have 8 different, low carb, boards that are comprised of what I will be cooking for that particular week.  During the school year, I only cook 4 days out of the week.  On Wednesday nights, I eat at my church.  Thursday nights, Big Daddy makes a pizza and I don’t cook at all on Sundays.  When summer rolls around, I cook 5 days out of the week.

Taco Bake

Broccoli, Ham and Mozzarella Bake; Caesar Green Beans; LC Cheddar Biscuits

Bacon Wrapped Chicken; Cheesy Zucchini Rice; Corn

Zuppa Toscana Soup and Cheesy Vegetable Soup

For my benefit, I will be posting the grocery lists for each week. I can do that here and then pin it to my pinterest page for that particular week.  Most of these things I normally have on hand, but I will still list all that is needed.  I can print this list off, mark off what I already have and then all I would have to add would be breakfast foods and lunch foods.  I’m all about simplicity and I love organization.  I buy they HUGE bags of mozzarella and cheddar because most all my meals have those cheeses in them already.

Just thought I would explain for those who have stumbled on my blog and think I have lost my mind 🙂
