Wednesday Night Meal

Cauliflower and Sausage Casserole

1 1/2 pound sausage

1 can cream of chicken

1/3 c. heavy whipping cream

1/4 c. water



Minced Garlic

4 c. cauliflower rice

1 1/2 c. cheddar

Brown sausage, seasoning, garlic, minced onion in skillet.  Drain.  In separate bowl, combine soup, heavy whipping cream, and water.  In greased dish, place riced cauliflower on bottom.  Top with sausage and then top with soup mixture.  Cover with foil and bake for 1 hour.  Remove foil, top with cheese and return to oven for 5 minutes.

Peas with Mushroom Sauce

1 T. Minced onions

Fresh Garlic

2 T. butter

10 oz. frozen peas, thawed

small jar mushrooms, drained

1 tsp sugar


1/4 tsp. thyme

Saute all together

Sauteed Kale, Spinach, Garlic and Onion



Onion, chopped

Coconut oil

Fresh garlic



Get coconut oil hot and then add onion and garlic.  Saute until transparent.  Add kale and spinach.  Toss to coat with oil.  Cook until all is tender.  Serve with a dash of parmesan.
