Cauliflower Au Gratin – Low Carb

1 head cauliflower

Onion Powder

Chicken bouillion granules

8 oz. mexican cheese

3/4 c. heavy cream

In large bowl, place cauliflower florets and microwave for 5 minutes.

In a greased baking dish (I used a deep, round dish), place a layer of the steamed cauliflower.  Sprinkle on some onion powder and chicken bouillion granules.  Add cheese.  Repeat, ending with cheese.  Pour heavy cream over it all and bake at 350 for about 40 minutes.

Servings:  8

Carbs per serving:  5

  1. This is such a great idea! I loooove potatoes au gratin but I rarely eat them because they’re so poor nutritionally. This is something I could definitely incorporate more often! I have totally been underestimating cauliflower.
