I made a REALLY good breakfast casserole, tonight (sorry, no picture...we ate it too fast)…
Ham and “Potato” Casserole – Low Carb
Ham and Potato Casserole
12 oz. ham (you can use lunchmeat…I guess it would taste the same. I cooked a large ham to use for several dinners)
8 oz. cream cheese
1 c. sour cream
2 c. cheddar (reserve 1 c. for topping)
32 oz. cauliflower (use florets…I used frozen and I put them in microwave for 8 minutes to thaw some. Keep them in chunks)
Put all in huge bowl and smoosh it with your hands…it was the easiest way for me to incorporate the cream cheese.
Put in greased 13×9 dish, sprinkle remaining cheese over and cover. Bake for 30 minutes at 350. I took the cover off and baked it for another 10 minutes.
This was SPECTACULAR!
