Stuffed Green Pepper Soup

Stuffed Green Pepper Soup

1 quart vegetable broth

1/2 lb. sausage, cooked and drained (I would’ve used more, but that was all I had)

2 peppers, chopped

1/2 onion, chopped

Italian Seasoning

Seasoning

4 cloves garlic

1 1/2 c. cauliflower rice

Provolone

1 can tomato sauce

Saute garlic, onion, peppers, and cauliflower rice with seasoning.  I added a bit of the vegetable broth to keep it from burning or sticking…just as needed.  I didn’t want to add too much broth to eat or my veggies (mainly the cauli) wouldn’t have gotten cooked well.

Once that is cooked, add in your cooked sausage and tomato sauce.

Add Italian Seasoning.

Mix well and add your cheese.  I cut up my provolone slices and I will probably add some parmesan to mine cause that’s how I roll.  Mix well and let the cheese start to melt.  Add vegetable (again, you can use chicken broth, water and chicken bouillon, tomato juice) broth and let simmer.

Season to taste (I needed a bit more to my liking).

**Be sure and note, that you can replace the vegetable broth with water and chicken bouillon cubes.  You can also add a can of diced tomatoes, which would be yummy.  I just used what I had, on hand**
