Low Carb Lasagna
2 lbs ground beef
2 cloves garlic
2 tsp. Italian Seasoning
2 tsp. Oregano
2 tsp. Basil
2 c. spaghetti sauce
10 oz. spinach
1/2-1 c. water (depending on how thin you like your sauce)
4 zucchini, sliced (think noodle thickness and size)
1 1/2 c. cottage cheese
Brown beef, onion and garlic. Add sauce, mushrooms and spinach. Add water until desired consistency.
Boil zucchini in water and lay out to dry.
Mix cottage cheese and eggs.
In greased 13×9 pan, place a bit of sauce in bottom of pan. Add layer of zucchini, meat, cottage cheese mixture, mozzarella and parmesan. Repeat ending with cheeses.
Bake at 350 for about 30 minutes. Let sit for about 5 minutes to firm up.
