Chicken Cordon Bleu: Low Carb
Ham (lunch meat cut into cubes)
8 oz. swiss, cut in cubes
1/4 c. all purpose flour
1 1/4 tsp. paprika
1/2 c. butter
2/3 c. water
1 chicken bouillion cube
1 T + 1 tsp. cornstarch
1 1/3 c. heavy whipping cream
Place cheese and ham in with the chicken. Mix the flour and paprika…coat the chicken.
Heat butter and cook the chicken. Add chicken broth.
Cook and simmer for 30 minutes.
Place cooked meat and cheese in greased 13×9 pan.
In another pan, heat up the heavy whipping cream with the cornstarch. Stir until thickened.
Pour over dish.
Cook at 350 for 30 minutes.

**I accidentally left out the flour, which knocked the carb count down to 6. The only difference it would’ve made was it would’ve thickened the juices a bit more. It was still a hit, here and no one noticed I left it out.**
