Panko/Parmesan Crusted Round Steak and Smashed Cauliflower

Round Steak

*Big Daddy got out too many packages of round steak. So, I made 20 (4 oz) servings.  It isn’t a big deal because my kids will eat on this all week, but it is an fyi for how many steaks are in a package.*

1 c. panko

Oregano

Seasoning

Basil

Parsley

5 T. Parmesan

2 eggs

Splash o water

Cut steaks into 4 oz servings (the palm of your hand, be sure and cut off fat).  In one dish place eggs and splash of water.  Whip with a fork.

In second dish, place panko bread crumbs, parmesan, and seasonings.

Dredge in egg and then in breading.  Place in greased 13×9 dish.  Cover and bake at 350.  Start checking after 30 minutes.

I will be serving this with smashed cauliflower (recipe in separate post), corn on cob and a salad.

Smashed Cauliflower

1 head cauliflower, processed into rice like consistency

1/4 c. sour cream

1/4 stick butter

Seasoning

2 cloves of garlic

Steam cauliflower in a bit of water, in the microwave for about 10 minutes.  Add sour cream, butter and seasoning.  I ended up throwing it all in the food processor to get it into mashed potato consistency.

I will say, this needs more seasoning because it was a bit bland.  I may also steam it longer, as I couldn’t get the texture just right for me.

For a first time, it wasn’t bad, but not my favorite.
