Cauliflower Fried Rice
1 head of cauliflower, cut and put in food processor until in rice size pieces
2 garlic cloves, minced
1 c. frozen peas
1/2 c. water
Bring water and peas to a boil. Cook about 5 minutes, until peas are done and then drain. In a hot pan, throw in cauliflower “rice”, onion, garlic, soy sauce. Toss around until heated through.
Once cooked and heated through, push over in pan. Add egg to the other side of the pan and scramble. Once scrambled, mix the “rice” and the peas together and heat through.
Add any seasoning you need or more soy to taste.
Serve with beef strips, beef tibs, chicken, pork (any kind of meat) and stir fry vegetables.
