Healthy Chili and Tacos

Healthy Chili (although I don’t think you can make it unhealthy and if you can, please don’t tell me cause then I will want to make it)

46 oz. tomato juice


1 whole onion

2 cloves of garlic

1 green pepper

1 lb lean ground beef

2 cans chili hot beans

Chili powder (to taste)

Cook your meat, onion, pepper and garlic.  Drain, return to hot pan, add seasoning and chili powder.  Add chili hot beans.  Let simmer.  Serve.

Serves about 10-12

Calories:  156 calories

It is well loved in our house, but since I can’t get away with making one pot of soup (I feed between 8-9 people on any given night), I also made tacos.


1 lb lean ground beef

1 whole onion (or this time, I used minced onions)

2 cloves of garlic

Homemade taco mix (add however much your taste buds desire)


2 T. sour cream (optional)

Cheddar (for garnish)

Lettuce (for garnish)

Tomatoes (for garnish)

Hard shells, soft shells, dorito shells, you get the point.

I brown my meat, onion and garlic.  Drain.  Return to pan and I add the seasoning and sour cream.  I blend it all together and serve it.

Now, for some kids, they like it with a hard shell, meat, cheddar and that is it.  Some kids like to add lettuce.  If you want a healthier version, you can layer your plate with lettuce, sprinkle on some meat and some cheese (and tomatoes but Big Daddy doesn’t like tomatoes) and then have a make shift taco salad.

No pictures cause chili and tacos are pretty normal.  They did taste good and there wasn’t a drop left…which is par for the course at my house.
