Healthy Beef with Chinese Vegetables and Rice

1 lb. stew meat (I cut this in small pieces and I marinate it all day in Teriyaki sauce)

1 c. broccoli

2 cans water chestnuts

1 can mushrooms

32 oz. stir fry vegetables


2 T. soy sauce

6 c. white rice, cooked

This serves about 12

Calories per serving:  203

Fat per serving:  4


So, I forgot to take a picture of this before I served it out (yes, I still plate everyone’s food from my husbands to my 20 yr old honorary daughter to my 8 year old.  They are all welcome to seconds, but I want to make sure they have a good serving of everything I make).

In saying that, I had to swipe Big Daddy’s plate because it still looked pretty enough to take a picture.
