**Side note for these two meals, I will thaw out a chuck roast and then I will thinly slice 1/2 of it for the chinese (add lots of peppers, onions, water chestnuts, mushrooms, bamboo shoots, snow peas) and then I will chunk up, in bite sized pieces for the beef stew (I add a bag of carrots, a couple of potatoes, celery) to make it filling
Chili/Tacos (I can never do just one pot of soup…I have to have 2 pots of the same soup or two different pots of soup to fill up my family (makes for lunch for a few the next day, as well)…but I have discovered that chili and tacos meld well and the kids are thrilled and it is filling)
Loaded Baked Potato and Chicken Casserole/Green bean casserole/Corn
For Big Daddy, who is beginning his healthy lifestyle eating, I’m making him lunches:
Sweet potato chips
Crockpot overnight maple/brown sugar oatmeal
Homemade Trail Mix
