Tonight, I threw together a dinner that the kids liked, I thought was okay and Big Daddy wasn’t fond of
If anyone tries to make it and tweaks it to where it has a bit more flavor PLEASE post and let me know what you did. As usual, I didn’t take a picture because I’m a slug, like that.
Baked chicken shredded (I slow cooked this all day with my seasoning and dry ranch)
1/2 c. mayo
1/2 c. sour cream
Spinach (I used a bag that I steamed down with seasoning, fresh garlic, and onion)
Bread crumbs, butter, and a couple of handfuls of cheddar cheese was the topping
I mixed everything together and topped it with the bread crumb/cheese/butter mixture (the chicken was already cooked and the spinach was already wilted). I baked it in a greased dish at 350 for 30 minutes. I thought it looked a bit too dry, so I added some of the chicken broth from the chicken (ALWAYS save your chicken broth!) and I covered it and baked another 15 minutes. The texture was not too dry.
It just didn’t have “something” and I can’t put my finger on it. The kids loved it and it had a huge bag of spinach, so tons of nutrients. I’m thinking maybe add cream of mushroom or celery soup maybe….I just don’t know.
We also had corn and mashed potatoes which is always a good thing 🙂
Francis was missing me, so she cuddled up on my side of the bed in my pillows. Needless to say, I had to change my sheets because there was dog hair everywhere! Excuse my messy bed LOL
