Warm Bacon Salad – GF

8 ozs. baby spinach

2 large eggs, boiled and sliced into 8 pieces

Bacon, cooked (reserve fat)

3 T. red wine vinegar

1 tsp. sugar

1/2 tsp. dijon

Seasoning

Mushrooms

1 small red onion

Remove stems from spinach, wash, drain and dry.  Place sliced egg, mushroom and chopped red onion over spinach.  In pan, fry bacon and remove.  In 3 T bacon fat, add vinegar, sugar, dijon and seasoning.  Pour over salad and toss.
