Homemade Cream of Mushroom Soup – Gluten Free

Yes, I’m awesome, I know 🙂  Again, this may be old news to others, but I am BEYOND thrilled to find a GF recipe because cream of mushroom soup is a bit of a staple.


3 c. fresh mushrooms, chopped

1 T. butter


1 t. parsley

1/4 c. water

4 t. tapioca flour

2 c. half and half

Heat butter and add mushrooms.  Add seasoning and parsley.  Cook and stir for 1 minute.  Add half and half, bring to a boil.

In separate bowl, mix tapioca flour and water.  Stir to mix well.  Pour into saucepan and cook till thickened.

Makes about 2 cups.
