Cauliflower Au Gratin

32 oz. frozen cauliflower

1/2 large onion, chopped

1/2 green pepper, chopped

1/2 tsp. minced garlic

Seasoning

1 c. chicken broth (I use a cup of water and 1 chicken bouillion cube)

1/2 c. parmesan, divided in half

1/2 tsp. basil

1/2 tsp. lemon pepper

8 ozs. cream cheese

TOPPING:

2 c. cheddar

1 c. season bread crumbs

1/4 c. parmesan

1 stick butter, melted

Steam cauliflower sprinkled with seasoning.  While cauliflower is steaming, place pepper, onion and garlic in skillet and saute.  Once softened, add 1 cup of chicken broth.  In large bowl, place cooked cauliflower and use a knife to break it into smaller pieces (recipe calls for it to be blended, but I don’t own a blender).  Add cream cheese, lemon pepper, basil and sauteed vegetables.  Mash together (add seasoning again if you think it needs it).  Mash together, like you are mashing potatoes.  Place in greased dish.  In separate bowl, combine topping ingredients and sprinkle on top of casserole.  Pour over 1 stick melted butter.  Bake at 350 for 45 min.
