Omelet Muffins

Grease muffin tins and preheat oven to 350.

In bowl, I added 18 eggs, chopped ham, chopped peppers, chopped mushrooms, parmesan, cheddar (anything you normally like, in an omelet, add to the bowl.  This is just what my family enjoys).  Add seasoning.

Spoon egg mixture into muffin tins and bake till done.  Start checking it at 10 minutes and then go from there.  All ovens are different.

Once done, cool completely (any heat will cause freezer burn in the freezer) and wrap a paper towel around each.  Place them in a gallon size baggie and freeze.  When ready, pull one out, paper towel and all and place in microwave.
