5 c. rolled oats (not instant)
1/2 c. ground flax seed
3/4 c. butter, melted
3/4 c. honey
2 T. vanilla
2 T. cinnamon
1 1/2 c. coconut
1 c. nuts, optional
2 T. sesame seed, optional
1 c. chocolate chips, optional
1 c. raisins or other dried fruit, optional
In crockpot, add oats, flax, cinnamon, coconut, seeds and nuts. Mix well.
In separate bowl, melt butter, add honey and vanilla. Stir into dry mixture. Stir well.
Place crockpot on low and leave the top cracked, to release the moisture (prevents soggy granola). Cook for 2 hrs. Stir every 30 minutes. Once done, take out and spread over cookie sheets. Add chocolate and raisins, if desired.
*I thought it lacked some sweetness, so I sprinkled about a tablespoon, between 2 pans of sugar cane and mixed.*
